Don't be afraid to keep your roasts to the lighter end of the roast spectrum, where Earl Grey tea, a spiced aroma and subtle fruited notes accent the brew.
The dry fragrance has a clean brown sugar smell, and dark fruit and baking spice notes accent this underlying sweetness in the aroma as well. The cup is marked by a complex smattering of spice notes like cardamom, clove, and a cinnamon-sugar mixture.
This Congo makes a really sweet cup at City and City+ roast levels, and preserves a tea-like acidic impression too. Fruit notes are heightened when the coffee cools down a bit, and hints of dried tropical fruit, date, and more are sensed in the middle and finish.
Full City roasts bring out much more of the prune/date type of fruited flavors, as well as a thin layer of bittersweet cocoa that fits right in with a cinnamon powder note in the finish.
